I will have a very nice cake of WY VSS Farmhouse later this week. Id hate to not use since I brought up to be able to handle a 10g batch of 1.065 Saison from a slant.

 

I need some interesting ideas. Thoughts?

something along the lines of Brooklyn Sorachi Ace, it's a saison so your yeast should be good
