I saw that the other day.  I will stick with my digital refractometer and excel sheet for conversion.  While it is cool, I would need more than one at a time and that is not in the budget!

I wish someone would have just said, this think is $250 and I wouldn't have looked at it.  That is freakin cool.  But I need kegs and a kegerator/keezer alot more than that.

i would like to be able to constantly monitor gravity.  that would be really handy.  i'd then make a gravity versus temperature profile and have it automated.  sweeeeeetttt!!!

Those graphs look as if the alcohol content goes up over time.  Why don't they add it all at once and be done with it?

Pretty cool, but I'm not sure how useful it would really be.

imagine you could constantly monitor gravity.  you coudl then tie this to your temperature controller and ramp the temperature up as your fermenation completes.  and all of this without exposing your beer to O2 or bugs.

Maybe for lagers but for ales, I really do not see the point of this.  I will just go by my gut feeling and raise the temps.  Has worked out OK so far.  I am also not really concerned about O2 or bugs when I take a sample ....living on the edge!

those are actually secondary to my desire to not shoot from the hip and really know what's going on in the fermentation.

Imagine if you could do this manually and enjoy the process!

my ability to control it is pretty discrete.  one shot in the morning.  one shot in the evening.  no adjusting in between.

i'm also not willing to crack the fermentor open multiple times per day to pull samples.

As I think it's a cool technology but part of fermenting for me is to taste the gravity samples. I taste my beer at all stages from grain to glass. I think this is a important aspect of brewing.

I'd like it more if it were rigged to a conical. And while we're at it how about a display as well as logging? What would it take to measure pH continuously? Would the probe wear out fast?

The probes we homebrewers typically use would. I don't know if money can buy you a heat tolerant one or not.
