I pitched 1.5tsp of amylase enzyme into one of the 6gal batches yesterday and its actively fermenting again this morning with the yeast that were already in there. I will see where it goes. If too dry I will cold crash it and blend in some of the other half and then just keep it cold in a keg till gone.
