This is mostly straight out of Farmhouse Ales with some minor tweaks. Hope to get it done early this week. I made my Bière de Nöel with this yeast and really liked the flavor profile. One of my favorite yeasts I've used.  I'm hoping to top crop a bit of it to save for some future brews a its a Private Collection yeast that was last offered in August. Probably start it at 68F and gently raise the temp. throughout the week. to the mid 70's.

 

Bière de Mars

 

6 gallons

OG-1.066

IBU-26

SRM-8

 

55% MFB Pilsner

30% Breiss Red Wheat Malt

14.8% MFB Dark Munich (11-14L)

0.2% Midnight Wheat

Mash @154F

 

38g. US Tradition @60 

15g Strisselspalt @15

20g Strisselspalt 160F whirlpool steep.

 

WY3725 Bière de Garde

 

Target mash pH of 5.2 Ca-30, Na-8, SO4-30, Cl-33

Finally made this yesterday. Had to do a 6hr. mash. Gravity came in a little high at 1.069. Upped the whirlpool Strisselspalt to 30g.
