Well, I intended to top crop some of the WY3725 from the Biere de Mars I did but apparently it's not all that top crop friendly. That beer was OG1.070 and now sits at 1.007 or 8.2%abv. (and 27 IBUs) and is tasting great for where it's at. It never formed more than a half inch of krausen (which was mostly a bright white foam) and had no discernible yeast layer so I could not top crop it. I really would like to harvest some of this yeast after primary as it is a PC yeast that they seem to release about every 15 to 18 months. I got it last August and don't want to wait until it comes around again. So need some experienced advice. I know saving yeast from a higher gravity brew is not best practice but can it still be done with reasonable success? Any special treatment I should give it? What do you guys think?
