So the reason why I never revealed the secret ingredient was because I am trying to start a brewery/pub. Rib Bone Brewing Company. I've been avoiding saying anything because I know my coworkers are nosy little shits and they'd try and read posts on it or maybe even try and blackmail me. Well, they know about the plans so I guess it's ok to out myself. There's a LOT of breweries in the area and by trying to make beer with the secret ingredient I was trying to get a leg up with a new style/gimmick. I know the community is tight and shares and all that bologna, but the bottom line is that it's a business and if you are first with something and really damn good at it, everyone then emulates you, but you get to profit off it first and drive business in your direction. A stellar unique beer can set a brewery apart and set them up to be profitable sooner.

With all that being said, I'm still not gonna tell you!

We are close to finding a location. We still need a little money. But we have our pilot system working, and I'm making some kick ass beers.

Here's a terrible pic that will be in the paper tomorrow.

That's our fermentation chamber/beer serving trailer that we outfitted.

Cheers!

It's not the beer, it's the marketing.

It's both.

Yep, although I'd say 30-40% beer and the rest marketing.  I know a few great breweries that are on the verge of going under because they don't know how to sell their beer.

I have been seeing it the other way too.  Breweries with bad (awful) beer that have a huge following because of their marketing.

Can swing a cat anywhere in SFL and find this to be the case. Most of it's swill.

Tampa is getting to be a good place for good craft beer. Cigar City, Coppertail, Rapp, Pair O Dice, Angry Chair, 7th Sun, Wild Rover, Green Bench, Cycle... Most of those make really solid beers. Only a few of them have some hiccups. There are some other breweries (about as many) that are struggling to make good beer.

I know I can make great beer. The business end is a bit scary, but I don't think it's something we can't handle. We're not going to distribute right away. We're buying a food trailer and getting that running to sling ribs and brisket while we find a place. When we get the place we'll operate the food end out of the trailer and people can eat in the tasting room. We save about 60-100K by not being a full fledged restaurant/brew pub. If we can satisfy the taps then we'll think about distributing a bit, but it will be more one off stuff done for marketing than for profit. My goal is to grow slowly and not outpace our quality. Lot of the breweries have tried to grow their market too fast around here and have failed because the beer quality suffered. Plus, there will be a crunch in a few years or so and we'll want to be able to survive it without the burden of too much debt.

Anyway, this is a very frustrating, exciting, and chaotic process.

Cheers!

Yeah, I guess the point is that marketing is what makes you truly successful.  Beer geeks hate to admit it, but it seems to be true.
