I was actually talking about IBUs just b/c the yeast dries the beer out so much it could get out of balance.
as for hop aroma/flavor I'm not really sure. not enough experience with the yeast.

Now I get it. I could see how too much bitter could mess it up. So, how high IBU's have you ever gone with a Saison? The one I love on tap right now pushes the style limit to 36 IBU's. To me, you wouldn't know it......

this is pretty much the perfect summer beer (at least if you aren't looking for hoppy as that might go to some variation of the drez chinook/citra/simcoe pale ale with it's use of pils and minimal crystal). had some before, during and post burgers for lunch today. fantastic!

Sigh. Sadly, this keg kicked tonight. Wife and I each had one smallish glass, enjoyed it until the end. No question we would make this again identical to the first batch. Hope your still enjoying yours Morty.

yeah - it's a one beer a night kind of thing. it doesn't taste very alcoholic though. no burn. no smell of alcohols when you are drinking it. the belle saison dry yeast did a nice job with the wort I provided.

Just an observation but ladies and non-beer drinker types like saison (or at least this one). It could be the solid buzz they get after drinking it though.

Yep. My wife loved this one. The intentionally higher (1.009) FG probably helped but mostly it was the lack of hops. Wife doesn't like hops too well.

I'm down to probably a gallon or so of this. Super clear and fairly clean as belgian beers go. Def gets the buzz induced quickly!

I would make this again no question and probably will next summer. My wife was really into it as well so we had little trouble going throught it, but our did end up a little lower ABV than yours did!I'm down to probably a gallon or so of this. yeah, the abv makes it tough to move too quickly.
