This turned out excellent. I used NS for bittering because I was out of my usual Gr. Magnum. NS is surprisingly a fairly clean bittering hop. You can add some Flaked Wheat or even more Malted Wheat and reduce the Pale Malt if you would like.

 

OG: 1.060

FG: 1.010

IBU: 62.2

SRM:4.8

 

66.7% Pale Malt

33.3% Wheat Malt

 

60- NS- 19 IBU

 

20- Mosiac- 18 IBU

 

15-Citra-17 IBU

 

5- Mosiac- 9 IBU

 

Whirlpool- Citra, Mosiac

 

1oz Coriander

 

Dry- Citra

 

WY 3944 Belgian Wit

 

Fermentation schedule

 

Pitch at 64* raise 2-3* per day until 70* and hold.

Dang, an ounce of coriander seems like a lot.

Not with all those hops. This is also a 10g batch. Forgot to post that.

A little update. This beer turned out spectacular. Id say one of the finest beers I've brewed for awhile.

that does seem like a lot of coriander.  I typically grind it up when I use it.  maybe not finely ground that might only just barely be detectible - I'm not sure.

Coriander was cracked/ground. This was a 10g batch so it wasn't to much and actually was blended well with the hops.

 

DH with your normal amount for a 10g batch you prefer, usually 1-1.5 oz for something like this.

 

FG was 1.010 on the nose. 

 

This beer will make it into my summer rotation for awhile.

about 1/2 oz is supposed to be around the taste threshold for a 10 gallon batch but I guess with a bunch of hops that threshold would go way up.  I can just barely detect 0.5 oz in 10 gallons of saison that I recently made.

I typically add an .7 to 1 ounce to my standard Saison. I use mortal and pestle to grind and the aroma given off is humongous fresh lemon. It's is an ample addition to 5 gallons.

I wouldn't change the amount of coriander in this recipe. This was a home run so I see no reason to mess with it.

I am not normally a fan of wit beers but this one has me intrigued.  I think I am going to try to get it planned out so I can serve it on the 4th of July,

That is one pretty beer and I like the hops.  I sat back, took a look at the glass and thought, man I'd like to try that but I'd probably only go 70/30 pale/wheat to avoid a stuck sparge.  Then I scrolled back to the top and saw your ratio :)
