Juniper Berries in a Wit

Ive got some whole dried Juniper Berries I thought would go well in a Wit. Crushed some for a sample and I think it could work. A little sticky. Yes or No? What bout blending them with some Coriander as well? The blend is a little sweet from the Juniper with the tang from the Coriander. Anyone ever use these in a wit before?

Sounds like a great experiment. Juniper always makes me think of Gin, and I've been on a gin kick lately. One I just picked up from Oregon is Ransom and it states it contains; Juniper berries, orange peel, lemon peel, coriander seed, cardamom pods, and angelica root. Not that you need all of that of course, but the orange and lemon peel might be a nice addition.Cool sitehttps://www.ransomsp...omtechsheet.pdf

I'm planning sweet orange zested into primary. I'm thinking about 1/2oz each of Juniper and Coriander in a 10g batch. Playing it safe.

I just kegged a 5 gallon Saison where I added the zest of one very large navel orange to primary after high K. It's barely audible but it is there. Your design for this batch has my attention.

I will keep you updated. I'm using the Wit yeast cake from the White IpA I posted in the recipe section.

Tasted the gravity sample. Not sure I'm getting much from the juniper or the coriander. I will post up in few weeks my final tasting impressions.
