Augie's Crab Cakes

 

1 Lb Crab Meat (I like the Van Camps brand at Wally World)

2 Heaping Tbs Hellmans Mayo

2 Eggs, Lightly beaten

1/2 tsp Worchestershire

1/2 tsp Cayenne

1/4 tsp Salt

1/2 small onion grated (optional)

1/2 tbl mustard powder

18 ritz crackers, crushed in ziplock bag.

 

Combine everything, ritz crackers being the last ingredient added.  Form into hamburger size patties.  Place on wax paper and dust with Panko crumbs.  Put in refrigerator for at least an hour.  Saute in frying pan on medium heat in butter and oil mixture for 3 minutes per side turning once.  Crab cakes should be crispy on outside, but moist and juicy inside.  Makes 8 hamburger sized patties.  Serve with tarter or cocktail sauce, I prefer Sriracha!
