I'm not sure I've had one of these that I've really liked.  In theory it sounds good but I guess I find the hops and the yeast kind of clash.  Is there a trick to making the hops and yeast play nice?  To be fair I've only tasted a handful of commercial examples.

 

I was just thinking about this b/c while looking at the foundation brewing company website I was looking over their beers and blaze looks really nice in terms of the grain bill but I'd be concerned with the IPA like nature of the hops with the saison yeast.  nice looking beer though!

Details

Grains: Pale Malt, Vienna Malt, Victory Malt

Hops: Cascade, Centennial, Chinook, Columbus, Simcoe

Yeast: Proprietary Farmhouse

ABV: 6.5%

IBUs: 68.5

I am not sure I have had any of these bit I plan to follow this closely because this is something I like the sound of if it can be done right.

what made me give this beer a second glance was the simple grain bill with victory.  I really think victory could work great with a saison.  I'll probably have more of an opinion on that soon though.

Coppertail (local) made a beer called Oxtail that's a rather hoppy saison. It's really good. One of their flagship beers is Unholy Trippel which is probably in the 60 IBU range. On that note, the BGS I brewed with coppertail wort has a crap load of german hops in it. I kegged it last night and it smelled wonderful.

the other thing I see is that saisons are usually really dry and that beer has almost 70 IBUs.  would it not be overly bitter?

I was surprised when i saw the IBU's in the OP.  I was originally thinking Tank 7 was one of these beers but that does not have nearly the IBUs if my memory is correct.

I had planned on a Citra Saison for last 4th of July and just never got to brewing it.  Maybe this year

I had planned on a Citra Saison for last 4th of July and just never got to brewing it.  Maybe this year

 

I could see citra making sense for a hoppy IPA like saison.

I can't be pulled from my Motueka Saison planned for Sunday, but in the past I have made a great Saison with 565, Pale Malt, Munich and a little C-60. I bittered with NB and finished with a butt ton of Amarillo.

Me to! So what would compliment Motueka without hindering it yet bringing on some BIPA'ish aspects??? I'm thinking Amarillo....

Next Sunday its on. 10 g's half Belle Saison half Yeast Bay a Blend. Motueka and TBD hops: 37'ish - 40-something'ish IBUS.... I just can't stick to a plan with this much time to think....

Sure try Amarillo if your gonna go american. Otherwise I would think a full whack of Saaz would pair likely with Motueka but be less IPA-ish.
