I think Motueka will get overshadowed by any of the type of hops were are talking about for this beer. Besides Saaz. 

 

Stepp, don't get off your plan for your Motueka Saison unless you want to do this beer instead.

Im sticking to my Motueka plan. Last night me and the Mrs. Enjoyed a 750 of DuPont. Damn that's one inspirational original. Simplicity at its finest.

Im sticking to my Motueka plan.Last night me and the Mrs. Enjoyed a 750 of DuPont. Damn that's one inspirational original. Simplicity at its finest.

 

Ive got some dregs from a Dupont that is at a 10g pitch-able rate right now. It was going to get Motueka but its going to be Citra instead.

According to what you've told me, you just might or might not change your mind on the hops ;)

 

Drew Beechum's Citra Saison looks like a neat recipe, do you have Experimental Brewing?  Good book.

No, I do not have his book. Is the recipe listed in his article somebody posted awhile back?

2% Acid

2% Caramunich

 

FWH – Amarillo

30 IBU Apollo @ 90

Citra 10, steep DH - most likely 1oz, 2oz and 3-4oz

Thanks. I may/may not use Acid. Not sure if I want a Rye Saison with Citra either. Sometimes Rye in Saison messes with my pallet a bit.

I think I had the acid to lower the pH some.  When I brew it I think I will just use acid to adjust it.

Yea, depends on what I decide on how to handle PH. What strain are you going to use?

I plan to have a Saison going soon with Omega Saisonstein so I most likely would pitch some of the cake.  I will also have some 644 ready too so I could do a split.  I know 644 is not a saison yeast but could be interesting.

The plot thickens.  My favorite sister from the Keys just sent me 2 nice bags of dried dark red hibiscus flowers.  They're soft and very very pretty with just a little fragrance.  Since I'm splitting a batch, I might think about adding some to the Belle Saison.  Last year my wife and I saw Pearl Jam in St. Louis and we had a late hangover breakfast in this cool diner that had a beer by (I think) Third Shift and it was a Hibiscus Wheat.  Frigging great beer.  The color was like Rose wine.  Any who, perhaps I'll add some to half the batch.  Thoughts?  Experience?  Comments?  Chides?  Guffaws?
