Chicken or Shrimp skewers...

I'm making this tonight. Certainly not original but everyone in the family enjoys this. I'll take a bunch of veggies and cut them up into 'skewerable' pieces: zucchini, squash, red, green, yellow and orange peppers, onion, cherry or grape tomatoes (leave those whole) and throw all of that into a bag with some EVOO and chopped garlic. I'm doing shrimp tonight so I'll clean that up and throw that into a bag with EVOO, chopped onion and garlic. The time-consuming part is 'skewering' everything. Get everything onto metal or wood (soaked in water first) skewers. I'll heat the Genesis to maybe ¾ high on left and center burners and coat the grates with some spray to avoid sticking. All of the ingredients are going to cook relatively quickly so I just pay attention to how the shrimp look and assume that everything else will be okay. Some of the tomatoes might char up and start falling apart but it's all good. The peppers and onion create some great aroma on the grill. Take them off when they're done and I usually serve it up with some jasmine rice and some bread. Cheers.

Meats and veg tend to cook at different rates. If you want both done perfectly it is easier to cook them as separate skewers and just combing at plating time

I was having that exact conversation with my BIL (an excellent cook and experienced person in the kitchen and on grills) and we concluded that everything we put on the skewers had a relatively short cook time. I let the shrimp dictate when things are done as they're the only thing that actually needs to be cooked. The peppers and/or onions may be slightly crisp (which is nice), the zucchini and squash come out just right and the tomatoes may have a bit too much contact time with the grill... they get squishy and some of them even fall off but I rescue those and put them on the platter with everything else... my wife likes them.

yeah - I typically do the veggies on their own skewer but here it makes sense.
