Stooopid hop question that I should know the answer to...

I have a nice pilsner on tap right now.  The balance is excellent.  Avangard German Pils, some light Munich and carafoam for the grain.  2 ounces of low-alpha Spalt (2.7%) for bittering and then another ounce of Spalt and an ounce of Hallertau Mittelfruh (3.2%) for 10 mins and then 2 more ounces of the HM 3.2% into the 175° whirlpool.  If I went to make this again and my hops were very different alpha numbers, what would you do with the late additions... line them up by IBUs added or volume (2 ounces for 10 and 2 ounces into the whirlpool)?.  I have always assumed that the bittering addition should be adjusted to IBUs/AAUs but that later additions could just be "however many ounces" because the IBUs aren't going to change much.  Is that question clear?

Late hops I would just go with the same weight. That is just how I roll. I would adjust the bittering addition of course

Just to be clear, you ARE saying FROG protection right? I think we're on the same page. :P

LOL...cut me some slack, I have had a couple double IPAs! Yes, we are on the same page!

Agreed... same page.You know, I ask this because I use to get the occasional 4.5% Spalts, 4.9% Hallertau or whatever but lately I am seeing some unbelievably low AA% numbers. 2.4% Tettnanger, 2.7% Spalt, 3.2% Hallertau. I think I saw 1.9% Styrian Goldings. I would ordinarily not use 6 ounces of hops in 5 gallons of pilsner but I needed to do that here. I plan to make this beer again and I'll get the bittering the same and then just volume on the later additions. Cheers and enjoy your IIPAs! I have had a couple glasses of this pilsner and it's righteous!

Same here as Drez, FWIW.

 

Same hop process that is. Cant, unfortunately, claim to have had a couple of IIPAs. Glad to see you guys are enjoying your homebrew!

I'd look at the whole picture when it comes to aroma additions for the whirlpool. That means Alpha and Beta, plus anything else you can find. You ought to be able to get something close based on the percentages they give you.

Keep in mind that you will get bitterness from whirlpool hops, so take that into account.  Otherwise, I'd agree with the "just keep the weight the same" crowd.

yep anything 175F or over (IIRC) will continue isomerization
