1272 - will be 3 weeks in the fermenter on Friday (probable brewday). In a conical to harvest or I need to make a starter tonight. Around 1.052 beer that it would be harvested from. Been below 62 df during the entire ferment. I say harvest.

Thanks. It's a week out of my usual routine to harvest. Brewing has been put off for a few weeks - time to go again.

If it's been in a conical for 3 weeks, I'd be more hesitant to harvest than if it was in a bucket. Much more pressure on the yeast cells and increased risk of autolysis.

Interesting, I guess that could be a potential problem. Poor planning, but I've never had autolysis with batches that sat longer in the conical. 15 gal Blichmann with 10+ gallons in it. I've only had autolysis once, and that was way back in the 80's during the first round of brewing. I'll still smell the harvest before I use it though.

Ive never made a starter cuz I never know when I'm gonna get a chance to brew until the morning of brewday. I always keep harvested slurry in the fridge. Even after a month of storage my slurrys never fail. It's easy for me cuz I always use Chico for everything. I'm a simple man I guess.

why not just use US-05? keeps for years and is always ready to go at a moments notice.
