Is my plan crazy, and should I be happy with what I have?

Ah, I don't break down the kegs after every use. I clean them out, drain out the dip tubes, let them dry, and then pressurize for storage. When I am ready to use them, I fill them with star san, and transfer it out through the liquid dip tube, so I don't worry too much about breaking down the kegs. Plus, I am too lazy unless if there is a problem that needs to be rectified.

You are definitely right about getting the pour right, as well as the comfort of knowing that I'm not throwing away any beer due to the tubing. This was definitely an expensive project just number-wise, but I was able to sell some kegs, and sell the faucets as I went, so the actual out of pocket cost was pretty minimal. I am still waiting for the buyer to send payment for the last four faucets, but once that is done, I'll be able to move on to the next project.

Haha. I'm actually thinking of adding two more in the future on the side of the coffin box. Part of that depends on how much I can brew in the near future. I have scheduled two double brew days in the next few weeks, so I may have another 4 beers ready to be tapped within a couple months.

I just bought a 10cf chest freezer to make a keezer… and I thought I had a big project on my hands. That's serious tap system right there!

Chest freezers are great too. The only thing is to be careful of your back when lifting! I actually built a rolling winch system so that I wouldn't have to lift kegs or fermenters in and out of the chest freezers.
