Since I couldn't brew I ran a couple cleaning cycles on the Zymatic and calibrated my pH meter.

The starter is huge and chilling. Grains are measured and will be crushed tonight and I'll do my equipment set up. Can you tell I'm excited for this batch?

Tomorrow I'm getting prepped for two 2.5 gallon batches of session IPA to be brewed on Sunday. Yeast is ready. Prepping everything else tomorrow.

Brewed up two batches of session IPA with two different grain bills, same hop schedule. Seconf batch on boil now.

New grain vs old grain.experiment?
So far, The old grain (2011?) had lower conversion efficiency. About 75% vs near 100% for the frsh grain. The pH of the old grain batch was a bit higher, so i'm not sure if this was part of the culprit. I'm going to need to run another experiment for that.
I extended the sparge and got the gravities close. 1.049 vs 1.046. We'll see how the finished beer turns out. It's pretty high IBU so there will have to be major flaws in flavor to tell if there's a difference. I wanted IPA, though, so i gotta live with it.
ETA: also, the clarity of the old wort wasn't as good. The break didn't form quite as well. Not sure if that's die to extended sparge or other reasons. The boil and cooling times were the same.

I would not have expected the difference in conversion. I wonder what might cause that. your enzymes retired years ago?

One of the issues I was tracking was the conversion. I wasn't that surprised to see the difference. Now I have to do some experiments to see if that malt really has an issue or I just didn't give it optimal conditions. I'll probably just do some mini-mash experiments for that.

brewed up a Pils, was going to do a Cz but went German instead 50/50 Bohemian Floor Malt Pils/Best Pilsner Malt bittered with German Magnum finished with Hallertauer Hersbrucker, 2124 yeast, 100% distilled water with 50 ppm Calcium added

I actually brewed this past weekend---a honey ale with lime and fennel seeds. It is for a friendly contest that my home brew club is doing with the theme of lime beer. I revisited a recipe that I created when I first started brewing.
