I actually brewed this past weekend---a honey ale with lime and fennel seeds. It is for a friendly contest that my home brew club is doing with the theme of lime beer. I revisited a recipe that I created when I first started brewing.

 

That sounds nice.  I won't be upset if you post the recipe.

Brewing tomorrow, a Czech pils w/ Magnum for bittering and then all Sterling for flavor, flameout, and hopstand additions.

1.053 Saison with WY3724 and a pale ale like dose of Hallertau Blanc going down on Friday. Got everything ready to go today.

I'm done for at least the next couple of months. I think my schedule is going to be April and October. The April batches will be ready by Christmas, and the October ones by Summer.

No brewing this weekend but I took a gravity reading on my Denny's Imperial Porter and I'm down to 20 after one week, which puts me around 7.6% right now. The flavor is chocolate decadent. At this moment, I'd say the base recipe (which I'm certain has been tweaked a "few" times by the man...) is fantastic!!!!!!! I can't wait to get this one cold and carbed.

Brewing five gallons of Saison with Jasmine flowers on Saturday.

 

OG: 1.043  FG: 1.005  SRM: 3  IBU: 24  ABV: 4.9

 

7.25 lbs - Pilsner

1 lb - Flaked Wheat

3/4 lb - Munich 10L

3/4 lb - Cane Sugar

 

1 ounce - Jasmine flowers (10 mins)

 

1 ounce - Cascade (60 mins)

 

WYeast 3711 French Saison

That yeast will ferment your carboy. If you are adding the sugar to dry it out there will be no "need" with that yeast. If for other reasons carry on! Looks like a nice easy drinker.
