I have seen them used for fermenters. This company even sells them as such.
Put a $2 airlock and a $3 spigot in the VV and charge and extra $50 for it. Nice.

I have 3 of them with valves installed and air locks on top. I put the valve on the narrow angled surface on the corner because you could place it much lower. They have worked great for beers, and meads, and I think way back when I bought them they were around $25-30. They were definitely my cheapest option for a large fermenter.I use the 50 pound Vittle Vault for grain storage. Have two of them actually. One for 2 Row and the other for Pilsner. Put small bags of specialty stuff on top and they keep for quite a long time.
Will the 50 pound vault hold 10 gallons plus headspace? Would be interesting to have on hand for double batches. I've just never had to siphon though, and I'm not sure I'd want to drill a hole for a spigot.

60 pound version now available at costco for $28. I dropped the $50 for the 40 lb stackable when they came out. This one is bigger,

That's the one I have for my bulk grain. I'm not even sure how you would go about converting this one.

When Chester was alive, it never occurred to me to use one for his food. :-)
