This stuff goes unlike anything I've ever seen!

 

I brewed on Saturday and pitched a fatty starter of 3711 into my 1.050 Saison.  It had been fermenting on the deck out back in the 85-90° heat.  When I got home from work last night, all the airlock activity had stopped.  So I popped open the lid and took a gravity reading...1.004!

 

From Saturday around Noon to Tuesday at 7PM...wow! 

 

I was worried it was fermenting too warm but it came out perfect!  Floral with some musty notes in the aroma and flavor.  Dry as can be which is exactly what I was going for.  I crashed it over night and am going to keg it next week.

The stuff can chew your arm off. Saisons scream Summer.
