I do the 1/2 pils 1/2 munich grist often; excellent combo.  Very versatile.

You can do a lot with that combo: alt, amber ale, o-fest, pale ale, amber-ish saison, ESB, etc.

yes, very good combo, for fall I'd lean to 75/25 Munich to Pils

anyway

5 lbs Munich

5 lbs Pils

maybe another 2 lbs of basic 2 row to bump your gravity up

1/2 lb Caramunich 80L

1/4 ll Melanoiden

Bitter with something like Perle/Northern Brewer/Tradition/Magnum to about 40 IBU (Perle really works here)

finish with a dose of a Noble hop @10 minutes with your Whirlfloc adding another 10 IBU

Mash  @ 150 for 60 minutes this is a very malty beer and needs no extra help with dextrines

ferment with a clean ale yeast, I actually like 1450 in this, @ 65 ish 1056 would be good too

lager in secondary for 3 weeks

Thanks Fellas! Mc, I have all of this on hand minus the 80, and will have a nice healthy cake of 1450 in another week. I'll sub some 60 and likely do a Norther Brewer bitter and maybe Motueka finish.

So back to the design. How about a Cascade bitter and a Motueka finish? Or should I go all out... Alt?

That's a nice idea nettles. Maybe stick to NB for the bitter. I'm pretty much going to follow Mic's suggestion above. 50/50 60/120 6oz each, 5#munich, 5#pils and 2#2-row on hand and to up the OG. Leaning between 1007 and 1056.
