Ok, I've been wanting to do something like this for awhile now. And recent talks have pushed me. High ABV and plenty dank while using some Apollo late. More Barleywineish. This is what I have so far. I don't have a good guess as to what my efficiency will be at this point becasue I have never done a beer this big before with my new system. I have done a beer with a OG of 1.081 before and got 80% so we will see. What do you guys think so far? Too much? Not enough dank? I am about a month or so away from brewing this so I have time to mull it over. Oh and excuse some odd grains/amounts. I am trying to use up some loose scraps kicking about.

How about a little chinook in the DH?

 

Grain bill is interesting, why the small amount of some of the crystals?  I am not really sure what 0.4% of C-60 will add to the final beer.

That's what happens when you're using up bits and pieces :) The recipe looks decadent and dank for sure. ~3# crystal should give a nice sweetness to bounce off the excellent combo of hops.

This is another cool recipe that is getting me psyched for Sunday's Imperial Amber!!

Yeah Chinook would be much better in the DH. I'll just drop the Cascade and add that, or keep them both. Will do two separate additions as well.

As far as the grain re-read the OP for explanation.

I'm curious how the 10%ish crystal malts do for this beer. It's a big beer and all those hops will need a malt bra.

 

Edit... I think I just came up with an awesome simile... hops are like the tits of the beer. The bigger the better!

I dunno. It's a big beer with lots of hops. You're gonna want some maltiness and residual sweetness from those crystal malts to support all of the alcohol and hops. I couldn't tell you if that is too much or too little. I've only made one DIPA ever so I don't have as much to go on. Personally, I think you have a flavor profile in mind and you've built the recipe to get there. What I think about the crystal malts isn't worth cat spit. You should brew it and report back. Trust your instincts.

Yeah I planned on brewing as is. I was just wondering where you were going with that statement. I think it is a go for Oct. 4th, just need to get the yeast.

So I basically dropped the ball on the yeast for this beer. I could get it tomorrow but I would have less than 48 hours to make a starter for a big beer, so not going to happen. Just going to plan on S-05 at this point. How many packets? 3? 4? Basically if all goes well it will be 11gal. of 1.094 wort into the fermenter.

Three packets of US-05 should be enough, but 4 is good insurance.

 

Eleven gallons of wort @ 1.094 OG is no time to scrimp on an extra packet of yeast.
