I have some 838 that i'm going to use for a Dortmunder then, probably, a traditional bock.  Barring any other input I'll probably riff off Jamil's BCS recipe, but if anyone has some thoughts or a recipe, that would be cool.  :)

I recently made Denny's base porter and it is absolutely decadent. I plan on making it again in late October to have around for the Holidays. I might try the Bourbon Vanilla aspect this time. Also thinking about adding some caramelized sour cherries.

Did you make it with lots of german malts and lager yeast?

I did not.  generally jamil is a great place to start.  did you check out ken's website to see if he had anything?

it seems fairly straight forward in terms of ingredients.  a mix of munich and Vienna, maybe a little color adjustment.  minimal hop presence.  no short boil on this one.  clean lager yeast.

Yeah, there's not a lot of mystery.  I'm going to tone down the Munich a bit from Jamil's and add a touch to the bittering.

Now that I have that big 'ol sack of Munich, I need to make something with it!  Maybe a dunkel is next.

It's one style that I've wanted to make, but haven't got around to yet (other than a couple Maibocks).  When I do, I'll probably just go all Munich Malt. I like to drink Dopplebocks when I'm at a monastery brewery, but a standard Bock is rare and special.  Moat Mountain, in NH, used to make one they called Bock Lager, that I thought was quite nice.

Unfortunately, I think they stopped making that one. It's a fun little brewery, though, and the hotel across the street makes for a nice get-away with the spouse.

I'm going to make Jamil's minus the melanoidin malt and with a few more IBU. Also going to step mash it.
