A couple years back I worked with Mtn on an IPA recipe.  I decided I needed to bring it back but modify it a bit to accommodate the hops I have on hand, including the boatload of homegrown cascades I currently have.

 

12 gallons

TG: 1.067

IBU: 93

 

28.5 lbs  Rahr 2 Row

1.5 lbs C60

 

Mash at 151-152

 

3 oz Columbus 14.8 %AA @ 60

.5 oz Columbus 14.8% AA @45

.5 oz Columbus 14.8% AA @30

2 oz Simcoe 13% AA @5

2 oz Homegrown Cascade @5

6 oz Homegrown Cascade - 175dF Whirlpool

 

Ferment with a blob of US-05 that I made a pale ale with.

 

Dry Hop with some more cascades if it tastes good.  If they are lacking the character I want I'll hit it with something else.  Maybe pull the 3 days with one hop as it wraps up fermentation and rack to a secondary for a second dry hop.

John, do you happen to have any Centennial on hand?

 

I ask as that would probably do great in the DH, especially if you stagger the DH additions as you describe above.

 

Overall, that looks like a recipe I'd gladly drink (lots of).

No... I'm all out of cents... doesn't mean I won't order some quick... the orginal recipe was Centennial, Simcoe and Cascade in the DH.  And the 2oz of simcoe at 5 is all I have left of those too.  So... I figured burn through what I have and get new at harvest time! :D

 

I've wanted a 6.5 or so IPA on tap for a while.  So I'm excited... probably won't get to brew this for a week or two yet though.

Looks good. Agree on the Centennials but could be wonderful as is too.

Same as the 30... just to smooth out the bittering a bit.  Playing off of the Dog Fish Head 60 and 90 min hopping regiment.
