Is it as easy as crushing up some sheetrock? My bag of gypsum is almost gone and not enough for what I would like to use for tomorrows batch. But I have plenty of sheetrock.

You wouldn't have any idea what impurities are in that sheet rock and how much of that stuff was actually gypsum. You are better off picking up some more food-grade gypsum for your brewing.

Definitely DO NOT use drywall.

ETA:  I am familiar with drywall formulation and manufacture.  DO NOT use gypsum board in your beer.

Yeah I admit I had been drinking when I asked this question. I ended up just using all the gypsum I had and added a little Epsom salt and that got me about where I wanted.
