I'm doing some market research.

Please try to rank them by how frequent you brew with them. There are too many to do a poll. If you use a dry yeast or other liquid yeast equivalent, please list it.

For example, for me...

1. 2565 Kolsch

2. 1007 German Ale

3. 1056 American Ale

4. 1084 Irish Ale

5. 3068 Weihenstephan

6. 1450 Denny's Favorite

7. 3711 French Saison

8. 1388 Belgian Strong

9. 3787 Trappist high Gravity

10. 3724 Belgian Saison

If you don't really have a top ten, please list as many as you purchase frequently.

Cheers!

these days I use US-05 a lot!

1. 1272

2. 3787

3. 1084

After that, it is pretty much one off at a time as I feel like voyaging out to experiment or to knock one off my list, and hopefully do a quick series of beers with whatever yeast is appropriate for those styles.

Hard to say as I have used many and like to try new yeasts. Should probably start concentrating on just a few though and getting to know them better.

1. 1450

2. 1469

3. 1272

4. 3726/3724/3711 have probably used them all equally.

5. 002/1968

6. 007

7. 3725

8. 001/1056/US-05

9. 011

10. 3787

I do also buy some Brett cultures but those are once a year usually.  Most of the time these days I stick with dry yeast.  For me, and the beers I brew it works just fine.

These are the 3 yeasts I use the most, and may be the only ones I ever buy again. At this point, I may only ever need the last two:

  • WLP002 English Ale - Good all purpose Ale yeast. I've used this for more styles than any other yeast. You need to plan your recipe to get a dry fermentation. Clean if fermented in the low 60s F, more flavorful in the high 60s F.
  • Wy1469 West Yorkshire - The best yeast I've tried for British styles. Exactly the flavor I'm looking for in a British Ale. Delicious.
  • WLP011 European Ale - My clean Ale yeast of choice. A clean German character cool, with a little mild fruit if started up around 65F. Good for Alts, Browns, Porters. Clean and flocculant, finishing fast then dropping clear quickly, it makes a nice Alt in half the time. The attenuation might be a little low for a Sticke Alt, but it works great at normal gravity with a well planned recipe and a good fermentation temperature profile.

If you like english character from your yeast it's one you really need to try. Any Wyeast dealer should have it available.

They have it in Woburn.  A pack of yeast lasts me so long, that I usually only buy it twice a year: a fresh pack of Ale yeast in the Spring and a fresh pack of Lager yeast in the Fall.
