If you don't have 10, don't worry. Just list the ones you frequently purchase.

1. 2124

2. WLP 830

830

what do you think of 830?  I haven't used it or the equivalent wyeast strain (apparently 2206).

eta:  or maybe mr malty is wrong.  I'm also seeing 830 as being the same as 2124 which is what I expected.  2124 is a nice yeast.

It's been a while since i used it, but i think its a nice yeast. You really need to keep the temp down, but if you do it gives you classic lager profile.

2124/830? I made a blond lager with it and started at 56-57F raised up to 65F. Was super clean and tasty.

I had a rauchbier ferment temp get away from me a bit with 830.  I think it only got up to 58-59 and it had very significant off flavors.  I could be remembering it wrong, though.

Wy2124/WLP830 Bohemian Lager - Good all around yeast, very forgiving of high temperature fermentation. I've never got a foul off flavor from it, but I have got a little extra, but pleasant, fruity ester when I started and fermented it up around 65F, starting to approach what you might get from WLP001.

WLP833 Ayinger - Also forgiving, a bit more malty character than WLP830.

Wy2782 Staropramen - I've only used it a few times. Nice, trouble-free, but I probably wouldn't go out of my way to track it down.

Wy2278 Czech Pils - More Czech character than the Staro yeast. It is supposed to also be tolerant of warm fermentation, but I haven't tried it with this one.

I really liked 2782.  I should try 2278 some time.

I liked it, too. I do find myself struggling with a reason to use something other than 2124/830, though. Probably for the same reason that a lot of brewers can't be bothered using anything other than US05/etc.

Being from Ayinger is enough of a reason to use 833 and I'll need to try the Andechs yeast, this year, but I find Staropramen to be just an okay beer, compared to those two.  I had no problems with their yeast, though, and it made a great run of beers.

BTW Wyeast has a PC strain (WY2352) out right now that is reputed to be the Augustiner strain some people have lauded.

Wyeast 2352-PC Munich Lager IIâ„¢

Beer Styles: Munich Helles and Dunkel, Oktoberfest/ Märzen, Munich Dunkel, Schwarzbier, Traditional Bock, Maibock/Hellesbock, Dopplebock, Eisbock
Profile: An excellent choice for the malt-driven lager styles of Bavaria, or other styles where a clean and malt-forward profile is desired. Compared to Wyeast 2308, 2352-PC produces less diacetyl and sulfur during fermentation; combined with its good flocculation and rapid maturation, quick turnaround with this strain is possible on many systems.

Alc. Tolerance           10% ABV

Flocculation               medium

Attenuation                72-74%

Temp. Range             52-62°F (11-16°C)

I used to go out of my way to get that, since neither of the shops in town carries White Labs.  Then I split a batch between 833 and 2206 and couldn't convince myself it was worth the effort to source 833 any more.

Can you make a good Munich Helles with 2206 or should you go with 2124?
