Christmas Saison

Taking the day off work tomorrow to brew!  Been thinking about brewing a "Christmas beer" and I wanted to combine that with the Saison style.  Below is what I've come up with and am looking for some feedback.

 

OG: 1.053  FG: 1.004  IBU: 17  ABV: 6.5%

 

10 lbs. Pilsner Malt

1 lb. Cane (Table) Sugar

 

1 oz. Mount Hood (60 mins)

 

1 tsp. Cinnamon (F/O)

1 tsp. Ginger (F/O)

4 - 8 ozs of Cranberrry Juice (to taste at kegging)

 

WYeast 3711

 

Ferment at 75-80 degrees

 

....maybe even give it some red food coloring at kegging to give it a pink to red'ish hue!!!

I can see where that could be good. In cooking and deserts cranberry and orange zest play very nicely together IME. Maybe a late boil orange peel addition?

I actually had 2 ounces of Orange Peel in there but took it out.  I completely get it though...I think I will add it back.

Never had much luck with cinamon in beer.  What kind are you planning to use?

I've used ground and extract...and have had success with both.  As with any spice, take an amount you think would be good...then use less than that!
