anyone used fenugreek?

It's supposed to be what they use for artificial maple flavor.  I had heard this in the past but was reminded on Denny's podcast that this was the case.

 

Maple beers have always been tough b/c typically the maple flavor just fades away.  Perhaps this is the answer.  I've had a couple of maple beers in the past that I really enjoyed but many didn't taste mapley at all.

Use maple extract? The fenugreek is in the imitation extract already.

Interesting.  I have had CBS and was not really impressed with the amount of maple in there.  My local place has a maple imperial stout on right now but there is now way I want to deal with the mess to get it.

I actually have fenugreek seeds(?) already so I don't see why I wouldn't just throw them in the boil.

Have you found any guidance on how much to use? Does fermentation alter the flavor at all? To my nose fenugreek smells like fenugreek and imitation maple extract smells like Mrs. Butterworth's… where I can smell that maybe there was something sort of fenugreekish about it. You could always go with real maple extract. We have some of that in the cabinet and I just sniffed it. Very maple-y. Interestingly one of the ingredients is barley malt extract.

I use fenu in much of my Indian cooking and I personally don't find maple as an off shoot. But that's my dumb opinion alone.

Fenugreek is what new mothers use to increase breast milk production.  Very odd that one can use it in beer.
