I just mashed in for a 10 gallon batch of an Irish Red Ale. This will be put on some 1084 slurry that I have.

I was originally planning on also doing 10 gallons of an Amber ale, but I don't have enough of the specialty grains on hand to do both, so I decided to do a 5 gallon batch of Russian Imperial Stout. I am still debating whether to use 1272 or 1084 for it, as I have enough of both yeasts on hand. Recommendations?

Anyone else brewing today?

I'm brewing Monday (and hopefully Tuesday).  On vacation for Thanksgiving week, and since Wednesday will be cleaning/get the house ready for Thursday, Monday and Tuesday are my days to brew.

Not sure what i'm making yet; one batch will likely be my Moving Day IPA, not sure about the other batch yet.

----------------

Gnef: for your RIS, I think the 1084 would work well, especially if you mash on the lower end of things (say 150°F or less) and pitch a good-sized starter or a good bit of fresh slurry.

What OG are you shooting for?

I haven't settled on the recipe yet, but the OG will most likely be right around 1.100. I appreciate your thoughts!

I am chilling the RIS right now. I boiled 2 gallons of the wort separately to concentrate it. When I measured it before adding it to the main kettle, it was well over the 40 brix that my refractometer could read. The OG on the RIS is 1.115. This should be interesting!

I did a session IPA friday night.  4th time in 5 months for this particular brew.  It's definitely become my house brew.  50/50 2row/Vienna with a touch of C15, Amarillo/Citra blend on the hops and US-05.

Brewing tomorrow. Measured all my grain out tonight. Doing the Quiet Storm Oatmeal Stout - never tried it, and I really like Oatmeal Stout. Batch #4 since I started back with brewing about 6 weeks ago. All my kegs will be filled. I kegged my spiced holiday ale I made a few weeks ago and it is awesome! Well, half went into a keg, the other half into a carboy for next year. The level of spice is perfect, and the citrus flavor has faded to a good level. I could probably double the molasses, though (used 12 oz for a 10 gallon batch).

Kind of silly, as I've been brewing for 10+ years, but I just tried dry hopping in the keg with my latest IPA batch, which turned out a little short on flavor/aroma. I've always just dry hopped in primary about 1 week into fermentation, never did all that much. I found a probably 8 ounce metal container with a mesh lid that tightens down. Amazing what 1 ounce of Simcoe will do in the keg...

Dry hopping in the keg is a definite game changer.

This screams you need to break out the old rig and do up a 10 gallon batch for old times sake!

Brewed a holiday Saison yesterday. That D-180 candy syrup is some really robust tasting stuff. Can't wait to see what it brings to the final beer. Mashed in on an ESB-ish ale tonight. Mash tonight, boil in the morning. Going to do the shaken starter thing for grins. (and because I didn't make a normal starter soon enough)

1.054

IBU-38

SRM 12

93.5% Rahr Pale Ale

6% Fawcett Dark Crystal 85L

0.5% Crisp Roasted Barley

Mash 148/40, 158/20

N. Brewer @60

20g each EKG/Willamette @10

20g each EKG/Willamette @FO

Another batch of Moving Day IPA is in the primary.

Was going to brew yesterday morning, and just as i was going to dough in, i noticed a leak around the MLT spigot.  Turns out the inside lining of the MLT (10-gal Rubbermaid) had cracked and was beyond repair.

The saving grace: that I noticed the leak before i mashed in, rather than after.  Crisis averted.

Bought a new cooler, modified my SS braid manifold, and took my new MLT for a test run today.  No leaks detected, and the brewday went off without a hitch.
