Black APA

This is a take on my session beer, I added some midnight wheat to turn it into a black APA.  Turned out to be a real crown pleaser.

 

BAW - Black APA

Mash temp 155 OG – 1.044 (70%)

Grist
56% (5.5#) Two Row
21% (2#) Vienna
8% (.75#) Caravienne

5% (.5#) Flaked Barley

10% (1#) Midnight Wheat

 

Hops
14g Magnum@60
14g Citra @15
28g Nelson @whirlpool- 175*
28g Galaxy @whirlpool- 175*
42g Galaxy @DH
14g Citra @DH
42g Nelson @ DH
Dry Hopping done at 65* for about 4-5 days

Yeast
S-05, chico, 1318 or VT Ale or ….

Water
Calcium – 132
Sulfate – 233
Chloride – 55

pH=5.2 – room temp

So which yeast did you please the crown with? Looks like a well thought out Drez recipe as usual. Would like a pint now please!

S-05 for the one pictured.  I think it would work well with any of the ones I have listed or even, a hush falls over the crowd, 1450?!?!  What?  Yes, I said 1450!!

So you have tasted recent 1450 results and liked? Are you coming around?

I sampled a version of my house APA on the way to the brite tank last night and it was very nice.  it got down to 1.011-1.012 and that was the big issue I had before, the beers would not attenuate.  I saved the slurry and want to use it again in that American Stout or Oatmeal Porter soon.  I will build up a new batch of yeast for BVIP.  This APA was one of the beers I added hops to in teh fermentor prior to yeast, I think it made a difference, the sample had a great aroma.

Good information there. Glad it sounds like it's working out for you. I'll be curious to see how the prefermentation hops added to The fermentor come out in the final product. Ill also be curious to find how beer clears with your normal process.

i did cold condition for 2 days prior to moving to the brite tank and it was not as hazy as I would expect. I did skip bio-fine this time so this will just be an experiment to see how cold conditioning works with this technique.

my prediction is that 1450 would work really well for the Chinook-citra beer.  unless drez tells me I'm wrong there I'll likely use 1450 next time around when I make something like it.

yes, I am aware it takes more time to clear, I assume by the time it clears the beer will be gone :)

 

It was a modified version of Chinook-citra hops were different.

 

28-Mosaic – FWH

14-Columbus – 30

28- Simcoe – 5

28- Citra – 5

56- Simcoe – Steep

28 -Citra – Steep

28-Simcoe – Fermenter

28-Citra– Fermenter

28-Simcoe – DH

42-Citra – DH

42-Mosaic – DH

14-Apollo - DH

I have used the 1450 on Drez's Chinook-Citra APA and thought it was great. What I am most curious about is how Drez likes it and how the "hops go in the fermentor with/ before the yeast" technique woks out.

ETA: I like that hop schedule Drez.

Meh ..I guess that is what you could call most of my beers.  I want lower ABV but hop flavor and aroma.
