Suggestions for a slurry of 1272?

I'm currently in the mode of burning through my PTO days before the end of the year and will be taking one Monday to brew 10 gallons. 

 

Need a few suggestions on what to brew....go!

Yep. I have made several fantastic hoppy ales with that yeast. Something boldly hoppy would be my recommendation.

I'm not big on IIPA's...anymore.  Although the hoppy brown got me thinking about a batch of Janet's Brown from one Mike McDole.  I haven't brewed that in years and just realized how much I missed it.

 

The Oatmeal Porter suggestion intrigues me as well.  Mind sharing a recipe?

Here is mine.  Brewed  this one on black Friday and I plan to dry bean it with 2-4oz for a couple days.  Made it last year and it was a very nice.

 

Grist Bill Mash at 154 OG 1.057

75% - Maris Otter (10#)

8% - Flaked Oats (1#)

8% -Crystal 60 (1#)

4% - Dark Chocolate (.5#)

4% - Pale Chocolate (.5#)

~1% - Midnight wheat (.25#)

Hops

28g Northern Brewer (20 IBU) – 60

28g Willamette (5 IBU) – 10

 

Water

Ca – 80ppm

Mg- 3ppm

Na – 24ppm

SO4- 56ppm

Cl- 102ppm

Bicarb – 65ppm

 

pH 5.4 Mash at room temp

Do you just toss the whole beans in?  Soak them in vodka first?

I just add them to the keg in a SS bag or a SS dry hopping device.  Then I wait a few days and taste and see when it is ready.

Thanks, wasn't sure. I know the English chocolates can be pretty dark and have a bit of a different character, so I was curious. Looks like a nice recipe BTW.

Thanks, smells very nice right now.  Using 1450 with this one to so we will see, it is still going strong.
