Christmas Pils

Well I'm planning this for tomorrow.  It's in the spirit of a BoPils. 

 

12 gallon batch assuming 75% effic.

OG 1.045

IBU 34

 

16 lbs Avangard Pils

2 lbs Vienna

1 lb Carahell

.5 lb Acid Malt

 

.5 oz Columbus 14.6% AA 60min

2 oz Hallertau Mitt 6.3%AA 15min

2 oz Hallertau Mitt 6.3%AA 10min

2 oz Spalt ??%AA 5min

2 oz Cz. Saaz ??%AA Flameout

 

Big Ol' Slurry of W34/70 from my last batch.

 

I know BoPils is typically straight up Pils for the grist but I don't know what to call this besides lots nobels in a pale beer.

I wouldn't worry about the style ramifications. Czechs probably don't give a crap about the BJCP guidelines. Looks similar to some of my recipes and I like it.

Is your flameout addition a 175F whirlpool addition?

Brewing got pushed back to Sunday... I may have slept in til 9... but that'll give me today to get grain crushed etc...

 

I hadn't really decided if I was going to cut the gas and let it sit for 20 minutes or if I was going to do the 175dF whirlpool.... How do the Cz Saaz do in the whirlpool?  Or do you think the Spalt would be better there?

I love both spalt and saaz in the whirlpool with the nod going to spalt.

Alright... Came in right at 1.045 OG.  I put the spalt in at flame out.  5dF outside today.  If I cut the hose at 180dF for the whirlpool I risk the hose freezing up.  This exact problem caused me to start 2 hours late today so I wasn't going to risk it.

This beer has turned out to be one of my favorite beers I have ever brewed. German hoppy lager goodness. Maybe Ken has a better descriptor but this is a fine brew. The 1st keg went way too fast, Iay have to brew this up again before it gets too warm for lagers for me.

That is a hoppy pilsner, I would definitely drink one.

Can't go wrong with that recipe. I think of them like a German/Czech version of our APAs. Hoppy with the malt to back it up. My favorite style.

Yep, sounds great and if 34/70 is 2124 in dried form, my guess is that you're getting some excellent character from that yeast. In late 2015 and into early 2016, I used a blob of 2124 a record SIX times (pils, helles, dark lager, red lager, Czech amber lager, helles again) and then I retired it but went out and bought another pack of it. I just can't get enough of that yeast and it works in so many styles. When it's warm outside and you have a nice, pale beer made with that yeast... it's about as good as it gets for me. Nice work JP.

Was the hopping schedule just as described in the OP? Not clear if you skipped the saaz altogether or put it in at 5 min. So… was it 6 or 8 oz total between 15 min and FO?

I was looking at that too but if you consider that it's a 12-gallon batch, it's not really over the top hoppy. It's still just 34 IBUs... right in my wheelhouse.

Im not worried about it being too hoppy. Was just trying to get a sense of what he actually did so I can model it/have it in mind when I make my own recipe. I'm going to make a batch of something like this sometime between now and the end of May.

The saaz went in at 5 min left and the salt went in when I killed the heat.

I was looking at that too but if you consider that it's a 12-gallon batch, it's not really over the top hoppy. It's still just 34 IBUs... right in my wheelhouse.


It's not overly bitter but has an excellent hop flavor.
