Horst Dornbusch

Anyone familiar with this guy?  He is the head brewer at The Neighborhood Beer Co. in Exeter, NH.

 

My brother bought me a book by him that was signed.  I can't seem to find it on Amazon and I can't remember what it was called now.  It basically goes over every style of beer and gives some thoughts on it.  It seems kind of like designing great beers.

 

Anyway, I plan to check out the brewery at some point.  Seems pretty cool!

He used to write  the Style Profile column in BYO that is all I know about him.  Always found it odd that his California Common recipe called for Cluster and not Northern Brewer.

even the beers at the brewery all seem kind of strange but it does say they are an American twist on classic german styles.  but even on top of that he's picking german styles that a lot of people will have never heard of.  dampfbier?  dunkelweizenbock?  :lol:

 

what makes me a little sad is he isn't doing any lagers yet.  all ales.

I have really mixed feelings about him.  On one hand, his awards and experience say that he should know what he's talking about.  OTOH, my experience and that of a lot of other people tend to make me disagree with him more often than not.

I have really mixed feelings about him.  On one hand, his awards and experience say that he should know what he's talking about.  OTOH, my experience and that of a lot of other people tend to make me disagree with him more often than not.

 

I have to admit the first thing I did when I picked up the book was flip to the page on helles and note that he said to do a step mash :lol:

Is that the main one in the style series? I read that one a long time ago.

 

Here's the thing with style books, they are neat to read for history, but really they don't tell you how to brew the beer. The best thing you can do is get classic examples and try to emulate them. The education you learn in dealing with the malts, hops, and yeast by trying to perfect the recipe will teach you more about brewing to style than any book ever will.

Looks like they are trying to put out an interesting german beer lineup without lagering capability. I hope lagers are in the works or it's not really anything to write home about.

for a long time all they had was dampfbier which I thought was a really odd choice.

I've picked up the same impression about him.  I disagree with at least half of what he says in his various magazine articles.  The best way I can describe it perhaps is that he seems like a really book-smart kind of a guy who hasn't kept up with the "brulosophers" who challenge tradition and try to grow the craft in new directions based on what we know today in the 21st century.

Heavy crystal in Altbier has nothing to do with anything but not knowing the style. I don't care if Dusseldorf, Munster or whatever. I didn't look at his recipes but does he also think a dusty sent hoppy?
