Oven Roasted Frozen Corn

I came across this and it's very easy and is way better than just thawing the corn in boiling water.  Not sure why I never thought to do something like this.  I just put some EVOO in the pan and mixed the corn around in it.  I also lined the pans with aluminum foil for ease of cleanup.

Oven-Roasting Frozen Corn
 
Oven roasted corn

Ingredients
  • Package frozen corn
  • salt
  • pepper
  • oil spray (optional)
Instructions
  1. Preheat oven for broiling. Move the baking rack to the top position.
  2. Spread frozen corn on a baking sheet.
  3. Spray with oil, if desired.
  4. Sprinkle with salt and pepper, as desired. Toss to spread evenly.
  5. Broil 8-15 minutes, until desired crispiness is reached.

I've pan fried frozen corn before with really good results. I let it sit on the counter for about an hour to thaw out first, but after draining the excess moisture I threw it in a skillet with some corn oil and butter. I added some shredded red bell pepper and a smidgen of garlic. Salt and white pepper and in the bowl. Good stuff.

I think the idea with the recipe I posted is to mimic corn on the cob that's been roasted on a grill or something.  it is a reasonable approximation.

I can see how it could turn out that way. :scratch: It sounds pretty good.

yeah, that southwestern salad recipe I made in the avocado thread called for frozen corn that was just thawed.  but then I looked at the nice picture of the salad and noticed the corn looked like it was slightly charred.  so then I found the instructions above on broiling the frozen corn and here we are today.  it just happened to be pretty tasty on it's own so I figured I'd post it up since it was super easy to do and everyone always has frozen corn.

the oven method gets them a little bit crunchy which is nice.

Did this liked it but the salt was too much when I did it. But the texture was nice and next time will salt post cooking to taste.

I made a batch of it with dinner last night. I should have left it in there just a little longer to get it a little crispier, but a light dusting of salt and pepper was all it needed.

I've been adding this to black eyed pea salad (aka "Redneck Caviar"). Provides a perfect chewy, toasty sweetness. My method is to line a sheet pan with foil, hit the foil with some spray oil, spread the corn, spray some more oil, stir around, then throw it in the oven. Thanks!
