This time by Chils and his pale lager. I already had a pale lager recipe drawn up and I was going to use 2124 or 2278 in it but my 2124 will be retired after fermenting the helles it's in and I am starting 2352 next which I already have slated for 4 or 5 beers. So I'm going to make a pale colored (3-4 SRM or so) beer with this 2112 that's fermenting my West Coast Lager right now. 2-row, flaked corn and some Carafoam, Mt. Hood to bitter and Hallertau in the last 5 minutes. Water with low sulfate and more chloride and then use the 2112 between 56° and 58° to get a good, clean profile. Plus, the beer should be uber-clear since 2112 has a tendency to drop out of suspension quickly. Call it a pale lager. Call it a Cream Ale. Call it a Cream Steam. I'll probably make it the weekend of 3/11 - 3/12. Cheers.

Should be a good summer quaffer but for all that is holy--please don't call it a "Cream Steam" :crazy:

I think Oskar Blues once had a pub only cream ale called Money Shot.  I think you should borrow that name.

This ended up being 6.5 lbs of 2-row, 2 pounds of Vienna and a pound of flaked corn. Mt. Hood to bitter and Hallertau late in the boil. 2112 on the yeast. I had it in a secondary and kegged it over the weekend, chilled it, gelled it and then carbed it. I just went downstairs and grabbed a sample... really nice. Super hazy because the gel dragged down so much schputz. I have had a hard time getting 2112 to cooperate on other beers after using it on a steam/west coast lager/common beer. I'm not sure why. We're having a graduation party on Sunday and I was wringing my hands over this beer hoping it would be okay because it's the only pale beer I have at the moment. Looks like it will be good and I'll try to snap a pic at some point.

I made a tap handle for it and couldn't come up with a name I wanted on the tap handle so I called it MAYFAIR COURT BEACH BLONDE.

Hmm, grad party with people my age, some people in their mid teens and a few kids under 7 (friends of ours had kids late). I'm not seeing it. :D
