Dank - IIPA

Trying to get away from the tropical fruit hops for a while so I planning a big dank IIPA.  I will most likely just use good old S-05 for this one. I am guessing between the Columbus, Apollo and Comet it should be plenty dank.

That will be Dank. No doubt I would drink it. Nice change up too.

Soon my good man soon. Just measured out grain for the Galaxy bitter and a 30 minute helles. I see this in April.

It was dank for sure. I added Chinook to the DH as well.

1272 & 1450 were the others I was thinking. I have them and 05 on hand. Part if me feels 05 to just get everything out of the way and let the hops shine.

I'm kind of partial to US-05/1056 for a IIPA b/c I like them to finish out around 1.010.  I also think that you get more yeast character when the OG is higher so I'd pick a yeast that has a baseline character that is more subdued.  that said if you were making something with more malt complexity (like denny's RIPA) the beer can take a little more character from the yeast.  but for something like this it seems like you are going for more of a clean backbone.

And this is why I haven't brewed with anything but dry yeast (or the slurry from one) in over 2 years...

it's nice to change up the yeast every once in a while though.  if there was a dry 1450 that would be great!
