The shame.  I don't have any Willamette hops.  So thinking about it I don't really care too much if I get something just like Willamette.  I'm just looking for awesome.  So to start with here is the original:

So on the hops...

 

I'll still match the IBUs of the original.  I don't believe I have any magnum so I may replace that with Columbus.

 

I'm also not a huge believer in hopping at anything earlier than 10 or 15 mins left in the boil unless it's bittering in which case it goes in at the start of the boil.  I think most of the flavor/aroma is driven off otherwise.  so I'll probably lump most of my hops in towards the last 10 mins.

 

I like the Chinook at the end so that will stay.  I was thinking EKG might be kind of interesting with the Chinook.  So maybe something like this for a 10 gal batch:

 

? oz Columbus @ 60 min

1 oz EKG @ 5 min

2 oz EKG @ 0 min

2 oz Chinook @ 0 min

Mt Hood would be a good sub for Willamette if you have that. Just about any high alpha will work for bittering. I prefer nugget. I use nugget instead of columbus for bittering in the DCRIPA.

I find Glacier to be more like Willamette than Fuggles, and I like Fuggles. But Willamette realy is its own animal and one that I also like.

maybe I'll just keep the hopping the same but replace willy with palisade since I have that exact amount of palisade (2oz total) to use up.

THIS^^^^ I've made it quite a few times without Willamette becasue I don't care for them in general and didn't have any around.  It just wasn't right that way.  I now make sure I buy Willamette to brew that beer.  Remember, I've brewed many test batches and determioned that's the best way to make it.  You can certainly change it if you like, but I have no idea what the result will be. You'll be making a different beer.

How close to Nashua are you? If you're close, head on down to Jasper's and pick up 2 oz. of Willy and while you are there grab a pound of Chateau Chocolate (Denny's preferred chocolate malt for this beer) and do it up righteous. You'll be out the door for like $6.00. Probably just my style of brewing but if I were going to do 10 gallons of this I would want to stick as close to Denny's original as possible.
