alternative hops for denny's noti brown ale

I SO know that! And I really don't think the beer will suck with different hops! It will just be a different beer than mine.


Even with the recipe and all the same ingredients as yours his will still end up a different beer. We all know a recipe is a small portion of the finial product.

diff water.  probably diff mash pH.  diff mash thickness.  diff boil rate.  diff ferm temp and profile.  the list goes on!

following the recipe pretty closely now.  I will be using nugget in place of magnum.  otherwise everything is per the recipe.  I even got the castle belgian chocolate malt.

Good on ya!   That chocolate malt made a huge difference in the flavor.

I was wondering about that.  am I going to want to throw out the 2-3lbs of likely breiss chocolate malt I have in the grain closet after I try this stuff?

Use whichever is appropriate.  Sometimes you want a more aggressive edge, so use the Briess.  Sometimes you want it softer, use the Castle.

gravity is at 1.020 right now.  the sample looks like still fermenting wort to me though.  it developed a thick head when I put it into the hydrometer sample thingy and it's super cloudy right now.  so I've kicked the temp controller up one last time to 70F and gave the fermentor a bit of a jostle to push things along.  if I can get around 1.014 I think that would be about right.  hopefully I didn't overpitch and end up with something underattenuated here.

I will say the castle chocolate malt seems really smooth.  like so freakin' smooth.  I'm curious if anyone has built a chocolate stout recipe around it.

Most mortals can't get it without heroic efforts so my guess is no. Good to know though, it sounds nice.

place I went sells it for $2/lb.  pretty reasonable.

It's not the price it's the availability. Very few online retailers sell it and none that I frequent or are anywhere near me.

oh, I figured you'd at least be able to easily get it online.  the place I bought it from locally does ship if that's one of your only options.

I think it's destiny!  what he doesn't seem to sell is 1450 although I'm sure he would order it if I asked him to.

Imperialized! I think Id be happy with it at 1.015.
