I am looking to do a simple beer this weekend to test out some new changes to the brewery.  My thoughts are 100% pils to about 1.050 with Saaz at FWH ( 25-30IBU) and in the whirlpool.  I am stuck on the yeast though.  I have some belle Saison and Wyeast Ardennes sitting around.  Anyone have a thought on what yeast would be better?  I have not used either one of these so please throw out a suggestion and a fermentation temp. I am also up for other hop suggestions if some other variety works better with belle or Ardennes.

If you whirlpool the Saaz go with Belle. If you keep the Saaz modest and late in the boil go with Ardennes. Go 65F either way.

My first thought without seeing the yeasts available was bo-pils. I think either one is fine. My buddy uses a lot of Belle and he lets it get pretty warm for his pepper saisons.

Talk to me.  I do have 2 packs of M-84. I am not tied to any particular beer style at the moment, just looking for a simple grist and a nice warm weather beer.

I LOVE Ardennes yeast and that would be my choice.  Makes a killer Belgian/American IPA, too.

Well, bo pils is just pils and saaz. If you want an easy drinker, shoot for 1.048, make sure your water is low in sulfates and relatively soft water. more Cl to SO4 should be over 1:1. Mash around 150F.

 

Bitter at 60 to 20 IBU with a high alpha hop like magnum or nugget.

 

If you want a nice hoppy one, add saaz at 20, 10, and 0. I'd stay below 30 IBU for drinkability.

 

 

Dammit... now I want to make this.

That is good to know, I have never used it and picked it up on a whim.

If you've ever had any of the Chouffe beers from Belgium, that's what Ardennes yeast tastes like.

I've made 2 beers with belle.  the big saison was fairly clean.  the smaller pale ale + rye beer had some banana and clove going on.  not huge but much more present than the first saison.  for the big beer I really liked it - for the small beer it didn't seem as good.  this isn't enough data points to really mean anything though so I'm not sure what the say.

 

I really like bo pils though :P

M-84, Mangrove Jack's.  I mentioned after Schwanz suggested Bo Pils that I had some.  So yes my plan took a turn from what I originally planned on but that is OK.
