Kind of interesting.  This is my first ever time lapse video so I apologize.  I would do a couple of things differently next time.

yeah, I thought I'd be okay going aperture priority and letting the exposure vary but it made it a little bit flashy.  the other thing I wish was that the ropes were tighter so they wouldn't move as much from shot to shot but there isn't much I can do there.

 

I did set the AWB to a preset (sunny day).  I thought it would be a fixed white balance but it appears like maybe it was still doing some adjustments from shot to shot.

 

for reference I think the left hop grew about 1.5-2" over that period of time.

I did a batch "i'm feeling lucky" in picasa and upped the quality a bit.

1 picture per minute.  video is at 24 fps I think.

You could do a timelapse of your actual brew day.

I've thought about that.  I think I'd need to hold each pic for a bit longer or it would just be me flashing by.

You could have fun with it, and just stand in one spot for a few minutes every now and then. You could also make sure to have a clock in the picture, analog would be fun to watch spin.
