Fellas,

Can anyone tell me what I might expect if I let this yeast ferment out a Pale Ale at ambient - 75-77'ish temperatures? It's a long story as to why. I don't think it would make a bad beer but what flavors might be produced?

Never done it that warm, but I'd expect a lot of esters. Maybe apple.

I'd expect some serious passion fruit esters

Carton Boat Beer is an APAish beer fermented with 2565 @68. I have plans to do an APA with 2565 but I planned to stay below 65.

Following to see where your beer ends up.

Is that 75-77 deg ambient or actual ferm temps?

Rotten egg farts? I'm actually not sure if you'll get more or less sulfur at that higher temp (definitely some kind of esters). Either way, keep it in primary until it's gone or it will stick around forever. Copper can help reduce it.

Thanks fellas, my post was sort of frantic to get a batch in. I found a pack of 05 that I am way more comfortable with going a little high :)

I am going to use Mandarina Bavaria for the first time and if I can't keep at 75 F I don't think I'll be worried. It's written that MB is a tangerine machine when used in the finish. We'll see.

On a side note, I did make my "Alt'ish" batch last week with 029 and have kept it at 65 F. It is full of wonderful malty honey bread notes and I think the yeast is keeping it very clean. At least that's what my taste buds dictate since I never used 029 prior.

Cheers.
