What will you absolutely never, ever use to  make a beer?

For me-

Citra. Tastes and smells like cat piss. Awful stuff.

Ringwood ale yeast: Lazy bitch of a yeast. Floccs too soon, doesn't finish what it starts and leaves your ale tasting like jerky and movie theater popcorn.

Victory/ biscuit: Nothing wrong with them....just every time I use them for a complex malt bill, I end up wishing I had used crystal, amber or something else. It's hard to describe what I don't like about these malts but I just kind of prefer other specialties malts that do the same thing.

3068 not a fan of banana and clove.

Summit hops, just not an onion/garlic fan

I will take any Citra allotted to you... Love it! :)

I like Citra.

Peated malt can DIAF.  In beer.  Scotch is not one of my favorites but that's different.

Hop - I hate Simcoe with a bloody passion.

Malt - dunno; haven't encountered a malt I don't like, yet.

Yeast - ditto.

Woah! IMO, there might as well be no other wheat beer yeast. Different strokes I guess!

The only beer I like them in was Quite Storm.  The one Jimvy forgot to scale down the recipe for some reason.  That was good stuff

I don't really have any "least favorites" but there are things I don't use in my beer. 3068 (as mentioned) is a yeast I don't care for and anything Belgian is pretty much prohibited... I have tried and I just can't do it. Peated and smoked malts are not really doing it for me and roasted barley is pretty much never used since I found Midnight Wheat, Blackprinz and Carafa Special 3. There are WAY too many malts out there that I have not tried... not because I don't like them but just because there are too many to try. I don't care for the coarse character of Chinook hops and I tried Mosaic a few times and got the dreaded "cat pee" from that. I like Simcoe, Citra, Amarillo, Galaxy, etc. I also think I ran into an issue with Fuggle that I didn't care for.

Lots of hate for Fuggles! Oh well. They're not my favorite but they have their place IMO.

smoked/peated malt

Hops... I haven't found one that I wouldn't use.

Yeast... not a big fan of english strains that are really estery.

Smoked malt generally, although there are some I have tasted that went over well. (ahem, Drez)

Like Schwanz I haven't met a hop that wouldn't have it's place. Many left to try though. There's room for both Citra and Fuggles here, I like them both.

Yeast- I have liked them all so far but again, I have many left to try.

At least we can all agree that Ringwood is a early floccing, buttery bitch.

Malt: DJ pretty much nailed it. There is no reason for peat malt to exist in the brewing world.
Hops: Summit.
Yeast: None that I truly hate but I've never been a big fan of 1056. I used to use a good bit of Ringwood.
