American Pale Ale
3 lbs Golden Promise
3 lbs Rahr 2-row base malt
3 lbs Wheat
7 ounces Belgian CaraVienne
.45 ounces Nugget pellets at 14.9% for 60 (about 26 IBU)
1 ounce Santiam pellets 6.3% for 15
1 ounce Crystal pellets 3.3% for 10
1 ounce Santiam pellets 6.3% for 5
1 ounce Crystal pellets 3.3% for 2
Wyeast 1056 American Ale
OG: 1.053, FG: 1.012, IBU: 48, SRM: 6-7, ABV: 5.2%
I mashed around 150° so the beer would finish clean and dry. The malt was conditioned, brewtan was used, balanced water profile with CaCl and CaSO4 right around the same ppm. One of the best pale ales I have made in awhile.

Thanks for posting. I can see how that would be so good in the heat of summer. I really like GP in a pale ale. I had plans to do a couple lighter pale ales this summer with GP but brewing has been a rarity this summer. I am familiar with Santiam but not Crystal and have never made a pale ale with just nobles or American nobles. What flavors do you get from Crystal?

FTR.... this keg kicked last night.
I have another one that's about to be sent to a keg. I think I used a similar grain bill but then I went old-school and used Centennial for bittering and Cascade late in the boil. I might do a little dry-hop action with more Cascade before I get it cold.

in my experience minor percentages of wheat malt atually seem to improve clarity up to about 25% ishVery sexy beer Ken. I'm wondering if you gel'd it. With 3# of wheat, I'd think it would affect the clarity, no?
