AIPA (no cool name for it yet)

I'm running out of beer so AIPA it is!

 

10 gallon batch size, 30 min boil

OG: 1.060 (maybe 1.065)

IBU: 60

SRM: golden

 

 

MASH:

? lbs US 2-row (adjust amount to hit desired gravity)

1.0 lbs C15

1.0 lbs carapils

2.0 lbs malted wheat

 

mash @ 153F

use brewtan as instructed

sulfate: 200ish

chloride: 70ish

adjust mash pH to 5.3 with lactic acid as needed

other: tap water treated with campden tablets for chlorine/chloramines

 

KETTLE HOPS:

? oz of Columbus @ 30 min (adjust to hit desired IBUs)

1 oz Amarillo @ 0 min

2 oz Galaxy @ 0 min

1 oz Citra @ hop stand (30 min)

2 oz Galaxy @ hop stand (30 min)

 

OTHER KETTLE STUFF:

whirlfloc @ 5 min, brewtan as instructed

 

FERMENTATION:

2 packets of US-05, sprinkled

start fermentation around 62F, ramp up to upper 60s as fermentation progresses for accelerated maturation

 

DRY HOP:

per 5 gallon keg (note rest of recipe is for 10 gallons)

2 oz Galaxy

1 oz Amarillo

1 oz Citra

also, I'm open to experiences people have had with hop combos.  I've never mixed galaxy with anything.  I've only used it in the single hop bitter galaxy recipe.

making some edits:

I thought the little bit of Chinook would be a nice addition to add just a touch of pine/dank to the fruity hops.

 

there is also a chance I may not have C15 and will use caravienne (20L) in it's place.  I need to dig into my grain buckets and see WASSUP!

Love what Chinook brings.  One of those hops that I pushed away for a long time till I saw the light.

Yep. I had an all Chinook (except for bittering) pale ale at Surly a while back that was terrific and lacked nothing IMO.

that sounds pretty intense.  how would you describe the beer?

Delicious. Classic citrus and pine with subdued fruit. Tasted to me like something I would make with all whirlpool and dry hops.

I should maybe try this some time.  I have to admit I'm a little scared it would be too much.

I might try it too. If you don't like the harsh quality that Chinook can bring then IME you just don't boil it. All whirlpool and dry.

i'm going to add 1/2 oz of citra to the WP I think.  trying to not overwhelm the galaxy.

Chinook got a rep as a bittering hop for IPAs in the west coast style, but has always been the grapefruit bomb when used at the end of boil/ whirlpool.

I really like Chinook, late. Great citrus flavor. I haven't used it in a long time, so I should remedy that.
