what is your favorite vienna lager yeast?

I was thinking of making helles but then I thought - you know what?  vienna lager seems a little more appropriate for the season.  I usually make something less mexican and more continental europe.  2 parts vienna malt, 1 part each of pils and munich and then a dash of dehusked carafa special II or III.  hop with hallertau or similar.

 

One I really liked that I made once used staro-prauge but that's a little tough to come by so what is your favorite lager yeast for this style?

I've used that yeast a few times but I don't think I've used it for Vienna lager.  I've used staro-prague and bohemian lager I think.

Yep... It's the only yeast I have used in Vienna Lager and it's great.

are any of the white labs yeast particularly good for this style?  830 maybe?

I guess 838 is the same as 2308 so that's a potential option.

I know I've said this before and it's probably tedious to read again but I tend to divide lager yeasts into your more pilsnery strains (2124, 830, 2000, 2001, 2278, 802, etc) and styles like dunkel, Oktoberfest, Vienna, bock, etc (2308, 2206, maybe 833 or 838, 820, etc). That doesn't mean you can't crossover (MtnBrewer mentioned making great pilsners with 2308) but I like that bready/crackery and bright character that comes from yeasts suited more towards pilsner production as opposed to strains that seem to produce a maltier beer like 2308 and 2206 will do. For Jamil's Vienna (which is the one I make most), 2308 just works. No experience here with 833 or 838. Or 820 for that matter.

OT I know but have you used the Bayern Lager yet?  I know you bought some.

I still have it and the question is whether or not Bayern Lager is the same as the temporary strain wyeast released earlier this year as 2352. I used that yeast 4 or 5 times and I really, really like it. That said, I would throw it into the "pilsnery" group because I find it to be more like 2124 than 2308. I wouldn't hesitate to use it in a dunkel, festbier or Vienna but it may not be my first choice. I think I made a pilsner, two helles batches, a festbier and my bordertown dark lager with it. Really good yeast... like among my favorite strains along with 2124 and the no-longer-available-as-far-as-I-know Staro 2782.

I wish I could tell you but I haven't used it yet... soon though. Both descriptions (Wyeast and Omega) say that the yeast is from Munich's oldest brewery (Augustiner?) and the numbers are the same too so my fingers are crossed that it's the same yeast. Very versatile strain for sure. I should be able to tell right away if it's the same yeast and if it is... Mmm, boy. :lol:

EDIT: One of the best beers I had in Munich was Augustiner Dunkel so when I fire up this Bayern Lager, dunkel will be one of the styles brewed, no question.

I also have a local supplier who carries the Omega. When I was in there last time, I asked them about it (two very experienced brewers work there) and they said that it's the same strain so I'm happy to have access to it after Wyeast discontinued it.

I've scored Silver with Wyeast 2206 while a friend of mine scored a Gold with WLP940 Mexican.  Can't say for sure which one I prefer as I didn't do a side by side.

WLP940 Mexican Lager yeast is fantastic. I don't have local access to White Labs so I always have to order it... otherwise it would be in my fridge at all times.

WLP940 Mexican Lager yeast is fantastic. I don't have local access to White Labs so I always have to order it... otherwise it would be in my fridge at all times.

 

huh - maybe I should try it out just for fun.
