Your earlier assessment is spot on... the character from the UK grains, hops and yeast make a beer like this such a joy to drink and when you think about the idea of going to a good bottle shop with A LOT of options (you may not have as many options as I do but the thought is the same), you're probably not going to get a good, fresh example like this so you have to make it yourself. I have had the yeast for a while and I really need to brew something with it and this thread popping back up was a sign.  So what do you think?

 

OG - 1.046  IBU - 35 SRM - 10.7

 

9.5# Maris Otter (TF)

.5# White Wheat (CMC)

.25 Amber malt (TF)

.125 Midnight Wheat ( color adjustment)

 

28g Magnum - 30

28g EKG - 5

56g EKG - DH

 

Ca- 72

SO4 - 101

CL - 55

pH 5.38

 

Yeast - West Yorkshire

I decided to pick up some TF Dark Crystal #1 ( 83-90L) so I will swap out the Amber and Midnight wheat for that.  Hoping to get this brewed over the weekend.  Still not 100% sure on the DH, I may just do an OZ at 5 and 0 and call it good.

How much of that Dark Crystal do you plan to put in there? The ESB I am drinking now has 6oz in it and the one I made last winter used 10oz. The 10oz version was rich and flavorful without being sweet or filling. Looks like Ken was similar with 12oz. in his recipe. It gives a nice deep orange-red color to the beer and has very nice malt/toffee character to it that I really like. Paired with MO and some fruity EKGs it would be delightful to my tastes. Hope you enjoy it.

My plan was just to replace the Amber and Midnight with the Dark Crystal so about 6oz.  I am looking forward to it because I have not had a true "English" beer on for a while.

This is one of the few recipes where I use that much crystal but I really like the way it came out. I drank entirely too much of this beer on Sunday while watching football, clearing the driveway and making dinner. I'm sure using half as much would be great (and a more amber color as opposed to the darker color) but I make a lot of pale ales with that type of crystal/cara additions so this ends up on the darker end of the scale.
