One full year of Experimental Brewing is in the books! (So much editing, so much umm and ahhs)

But that’s beside the point - on with the show! We tackle some user feedback around Drew’s keg purging methods and Denny’s feelings on Nugget hops. And then it’s into the pub where we tackle the big news about ABI’s acquisition of Northern Brewer/Midwest. We’re puzzled - are you puzzled? Join us in being puzzled! Drew talks about his experience with Cask Marque and finding righteous beer bargains.

In the brewery, we talk about the beauty and performance of JaDeD Brewing’s chillers. Seriously, these things are great.

In the library, a little comedy courtesy of McSweeney’s from a listener and a new podcast from the Master Brewers Association of America for your actual knowledge.

In the lab, we discuss the results of our first New England IPA experiment - Wyeast 1056 vs. Wyeast 1318. Can tasters taste a difference? What about the haze? The Hop character? Where do we go from here.

And it’s a twofer in the lounge as we just finished a quick trip to the Portland/Vancouver area to talk at our sponsor Brewcraft USA’s RetailerCon. So we started our trip by talking with the folks at FH Steinbarts about their shop and their community’s recent speakeasy loss. And then we get into a Pineapple Kolsch with Larry Clousner, great friend of the show and partner at Pono Brewing.

We close out the show with Drew’s recent reading about some of the deep seated organized crime and corruption of LA in the 1920’s and 30’s with “A Bright and Guilty Place” by Richard Rayner.

I will have to take a listen to the NEIPA part as I have used both of those and have my own opinion on them in that style of beer.

For the NEIPA are you using any kind of kettle fining and are you cold crashing the beers?  I am in the middle of the NEIPA craze and talked to several brewers both commercial and home-brewers and many are not using any kettle fining but are cold crashing.  On the home-brewing side, many are using dry hop rates close to 2oz/g.

 

I have actually done these beers with

S-05

1318

Conan

1450

1272

 

Truthfully I like 1272,1450 for this style.  Some are even saying that yeast does not matter since one VERY popular brewery that is doing this style started with S-05.

 

As for 1318 vs Conan I think you will see Conan will drop out more but it will really depend on what Conan you get.  I have seen they are all a bit different and some work better than others.

 

Oats is another interesting topic and that goes to Flaked or Malted.  I just did my first beer with malted oats ( and brewtan) and so far I have only tasted a hydro sample but it tasted much "thicker" than the 1.010 gravity. 

 

Personally I think more experiments could be done on this style and one would be on hopping.  There seems to be 2 schools of though on hoping.  One is add a ton in the WP and normal"ish" HB level dry hop, .75-1oz/g.  The second is bitter and add very little at the end and save it all for the DH and do something in the range of 1.5-2oz/g.

Good stuff here Drez. To me the biggest trick with making this style is the stability of the haze. If the beer starts to clear your style defining hop character is going to go with it. I have a few ways in mind for doing it but haven't played with this style as of late.

 

How are you able to keep the haze/hop character around for any length of time or are you, like many people, consuming the beer in pretty short order such that haze stability doesn't much matter?

I will be curious to see the haze on mine tonight.  It had 2#'s of malted oats in a 5G batch.  I did use fining in the kettle, cold crashed for 3 days @ 38, used Brewtan and a smidge of biofine.
