I brewed this yesterday and it tasted great going into the fermenter. OG was 1.066. Next is figuring out how much raisin to caramelize and add in. Will also add 1 cinnamon stick and 1/2 vanilla bean.

 

I'd go light on the raisins.  I made an oatmeal cookie brown a while back.  The raisins were too much for me.  I ended up dumping half the batch.

What is light? How much did you use? And how did you add it?

13.5 gal preboil  11.5 postboil

 

8# 2-row

9# Maris Otter

2.5# oatmeal

1# special roast

1# C-60

4 oz chocolate wheat

~0.5# raisins with enough water to puree in the blender - added to the boil kettle late

 

2 oz Northern Brewer 60 min

1.8 oz Northern Brewer 10 min

 

1.056 OG

39 IBUs

1056 slurry

 

FG I don't know.  Never measure it anymore because most of my beers come out fairly dry.

 

FWIW it did taste quite a bit like oatmeal cookies but the raisin flavor was just to cloying and sweet for me.  And I do like raisins...........  That's all I have.

Ok, thanks. Our grain bills were kinda similar. I guess a half a pound of raisins doesn't seem like much but now I know. Although you did add them in the boil so I don't know how that would compare to caramelizing and adding to secondary. I guess the good part is I can pull the beer off the raisins when I think it's right.
