So I've got some WL002 going that I can use to make another beer in a week and a half.  I'm using cavman's bitter galaxy as a starting point.  The main difference will be more alcohol and hops.  but also different hops b/c I don't have any galaxy right now.  (still waiting to hear from Ted!)

 

The malt part of the recipe will be pretty straight forward.  ETA: This is a 10 gallon batch.

 

? lbs pale ale malt (could be GP, MO, Optic or some combo of those to hit 1.058 on my system)

1 lbs C40

 

mash @ 150F

 

I'll mostly use gypsum along with a little CaCl to lower my mash pH.

 

boil time will be 30 mins b/c that's how I roll now.

 

now for the hops I'm kind of up in the air.  I have a solid selection of stuff I could use.  I think I'll probably go for about 50 IBUs overall.

 

I tend to use Columbus to bitter my pale ales and IPAs now.  I think it could work here too.

 

I'll have to check my notes but I think just did 30 mins and then a WP hop for the bitter galaxy.  I think for this beer I'll do an addition at flameout and then do a WP addition.  and of course there will be dry hopping on at least one keg :D

 

so for flavor/aroma hops I was thinking some mosaic might be good.  I also have centennial but I've never used those two together so I don't what know it's like.  other options are the ever present citra, Chinook and simcoe.  also Amarillo, mt hood, EKG.  you guys have any thoughts here?  the hop game is weakest aspect of my recipe formulation.

I have been a huge fan of Mosaic and Amarillo together as of late. Roughly 1.5-2:1 Mosaic:Amarillo. My secondary choice would be equal parts Chinook, Centennial, Amarillo.

 

Talk to me about Optic, I've never used it. What is the flavor like?

I have been a huge fan of Mosaic and Amarillo together as of late. Roughly 1.5-2:1 Mosaic:Amarillo. My secondary choice would be equal parts Chinook, Centennial, Amarillo.

 

Talk to me about Optic, I've never used it. What is the flavor like?

 

I'm not sure since I've never used it either.  I just have a 10lb bag of it sitting in the brew closet taking up space :P.  after I bought it I read that it's not quite as rich as MO so I'm not sure what I'll think.  I assume it won't be bad though!

I found optic to be in between typical bland two row and MO.  I liked it but the price went up so I just blend TR and MO now.

 

Simcoe/Amarillo and Citra/Amarillo are both wonderful classic combinations.  Simcoe, Columbus and Amarillo would be wonderful as well.

I guess I should say I'm a little skeered of Amarillo.  I'm not sure the batch I have is top notch.  fine to use in moderation it seems.

I feel you there!!  I want to brew up a batch of Holiday Hug and I have to come up with a sub for Amarillo.  I have plenty of it but it just seems the beers I have made with it recently have not be all that good.  Simcoe/Citra then!

Cascade, Centennial, EKG. In a ratio of 1:1:2. Alternatively Cascade, Centennial, Columbus is classic and delicious used in equal parts.

So I'm thinking something like this:

 

2 oz columbus @ 30 min

(3 oz total) 1 oz each of cent, simcoe, amarillo at flameout

(5 oz total) 2 oz each of cent and simcoe and 1 oz of amarillo whirlpool

 

I'll dry hop with a something like 3 oz of cent and 2 oz of simcoe per 5 gal keg.

I noticed yesterday I just a few more ounces of Amarillo and then I'm onto a new bag of Amarillo :D
